I already messed up my schedule + I cooked today…

Well. I blew it. Right after promising daily content, I skipped a day. Feels bad losing that 9 days streek, but I promise I’ll get it back. The worst part is that I have a lot of content ready to go that just needs to be moved over to WordPress so I didn’t really have an excuse. Anyway, I aim to not let that happen again. There’s really no excuse to have missed a day. I apologize and I will do my best not to let it happen again.

No, this is not today’s post. I’ll be adding some content in a bit, but for now, here’s a pic of what I made for lunch/dinner:


Crispy lemon-pepper tofu with garlic couscous. I found it on Reddit but the post linked to an Instagram post for the full recipe. Here’s the link for that if anyone is interested. It’s for just the tofu. We just made the couscous as a side separately. The tofu was incredibly crunchy and the texture was really nice. The outside crunched into the soft inside and it was such a textural delight! We had some trouble with the sauce, though. Following the recipe, we ended up using maple syrup which I think we cooked for too long resulting in a molasses-ish consistency. Obviously no good. So we juiced half of another lemon and added more pepper (to taste). The result was a great sweet yet tangy sauce that no longer had the consistency of sludge, but still coated the tofu very nicely. Since I’m not vegan, and this was a vegan recipe, I’m probably going to use honey in the future because it was difficult to really mask/work with the maple syrup flavor.

As for the couscous, I won’t lie, it was a boxed mixture. Delicious anyway and it tasted AMAZING with the tofu sauce. The whole dish turned out really well for my first time handling tofu. I was so happy about the fried exterior. I’m not sure what I expected but the result was absolutely delicious!

My portion of the tofu probably looks small but I was using the recipe for four people and honestly, I think it was enough. I plan on doing more with tofu in the future. I have a “beer-batter mango salsa taco” waiting for the next attempt. I honestly can’t wait. Tofu is so damn easy to cook with I don’t know why I didn’t start using it sooner.
